Meal log for Sunday July 4, 2021:
BREAKFAST
- Small mixed salad of greens, broccoli, paprika, and mini tomatoes, topped with homemade onion, carrot, and olive oil dressing.
- Green smoothie mixed with kale, Japanese mustard greens, banana, and honey.
- Homemade unsweetened oatmeal scone topped with some apricot jam.
- Cappuccino made with soy milk.
LUNCH
- Popcorn mixture of caramel and cheese flavored popcorn.
- One beer.
DINNER
- Approximately 20g of leftover smoked brisket.
- Steamed eggplant and mushrooms in a soy-based sauce.
- Cucumbers with Japanese mayonnaise and miso dip.
- Spinach and ground sesame.
- Tofu with ponzu and yuzu kosho.
- One slice of cherry pie with a small amount of whip cream topping.
- One beer.
Overall, I have no complaints about today's meal. Needed to be pretty thoughtful considering the lack of cycling and the huge celebratory meal yesterday. There is a small chance I will be able to hit the pavement tomorrow bright and early. If an opportunity presents itself, rest assured I will be out there riding Red Chameleon like there is no tomorrow.
